Rye whiskey    50ml

Rye Whiskey cannot be called Bourbon as the mash content is at least 51% rye rather than corn. A ‘straight rye’ is a rye whiskey that has been aged in new charred oak barrels for at least two years. Rye whisky lends itself well to prolonged ageing and is generally fuller and spicier than Bourbon. For this reason, it makes an excellent alternative to Bourbon in the classic ‘Old-Fashioned’ cocktail, complementing the orange and bitters perfectly.

Corn/Unaged whiskey    50ml

Corn Whiskey is, perhaps unsurprisingly, a whiskey with a corn content of over 80% and is aged in uncharred barrels, unlike Bourbon or Tennessee whiskey. As it is not aged in new charred oak barrels for two years it cannot be called ‘straight whiskey’.

Vintages

There are not many “Bottle in Bond” bourbons produced today. They made up the bulk of what was sold before Prohibition (1897 -1920). It was “the good stuff” because you were guaranteed that the bourbon was a good age and a good strong honest proof, and you knew it came from one distillery

Barrel strength, small batch/ single barrel

These bourbons have no water added to them after ageing. Most bourbon is barreled at 125 proof. Depending on where they are stored in the warehouse, the proofs will rise or lower during aging, but most barrel strength bourbons are at a higher proof, 110 or higher

Straight bourbon    50ml

A whiskey can only be called Bourbon if it fulfils the following conditions: 51% and no more than 80% corn, the whiskey must leave the still at no higher than 80% alcohol by volume, it must be aged in new charred white oak casks, bottled at no less than 40% abv and nothing other than water may be added to the spirit to alter its flavor.

Tennessee whiskey    50ml

There are four brands of Tennessee whiskey on the market. Some Tennessee whiskeys undergo a filtering stage called the Lincoln County Process, in which the whiskey is filtered through a thick layer of maple charcoal before it is put into charred new oak barrels for aging. The filtering process is named for Tennessee, which contained the Jack Daniel’s distillery when it originally began its operation.
